
What are typically Thai condiments. I think the Thais generally have a sweet tooth. There’s always a pot of sugar on the table and sweet chilli sauce. The other popular ones are fresh cut chilis in fish sauce, Maggi and soy sauce. The sketch above is the minimum requirement for a table. This is even before you order. Each table has a little basket of sauces, and when you order your meal, more will come with it! ;p

I don’t know. Sometimes they put so much chili in everything, can’t taste or savour anything, But that’s all right. π

Only salt and pepper are usually placed on restaurant tables. Anything more would be offered as required depending on the meal. I buy a lot myself to add in cooking. Yours sound great.
